Sweet & Sour Mango Relish

Mangoes, Mangoes & more mangoes. I go crazy during mango season. There is so much that can be done with mangoes , raw & ripe both, other than enjoying them as is of-course. During summers, just before the rains start, my mother used to plan making pickles & relish with raw mango. Relish and pickles are an essential part of the Indian meal. Most Indian households will have a couple of pickles and chutneys stocked up in jars in the kitchen. This relish or chutney comes to the rescue on the days when you want a quick meal. Hot tea,…

Chanaa Masala

Many friends have asked what is the secret of your Chole and I would say none. Recently a friend complained that her Chole does not come out the way mine do. We looked at the recipe, she was using. The ingredients and ratios were OK, the only difference was that I use home made Chanaa masala. So I promised her to share my home made chanaa masala recipe. If the masala is ready then making chole is not very time consuming. Else, taking out all these spices in required measurements it self is very time consuming. Earlier my sister would…

Vegan Coconut Banana Muffins

I got big Coconuts from a friend who came back from her hometown in Kerala. I have never seen such big coconuts and was very excited. The same evening I met a friend who is vegan. Every time I meet my vegan friends I get more inspired to work on vegan recipes. Therefore I thought of doing a Vegan coconut muffins for breakfast. Did a trial batch, modified the ratios and got the ratios right in the second trial. I also consciously kept nutrition in mind while working on this recipe. As a mother of four year old, I want…

Sooji Ka Halwa ( Kesri Bhaat )

Sooji Ka halwa or Kesri bhaat is the most commonly made sweet in an indian household. It is offered as prasahad in Kanjake ( as mentioned in my Kala Chana post ). Each family it’s own recipe of Sooji Halwa. I add Besan ( Gram flour ) and it gives it very earthy taste and a lovely colour. Also, there are various types of sooji, coarse or fine. For Halwa we use fine sooji.

Badaam ka Sharbat ( Almond Syrup )

Another childhood memory. I was born and brought up in Uttar Pradesh ( UP) . Summers in UP get really hot and mercury hits 50 degrees Celsius. Food during summers had to be such that the body cools down is able to survive the heat. My mother used to prepare badaam ka sharbat at home, as the summer started in the month of April and till about August, we always had it with milk. It is very nutritious , is considered good for eye sight and also a home remedy for nose bleeding due to heat. It can also be…

NanKhatai ( Indian Biscuits )

Nankhatai is a variety of cookie popular in India and Pakistan. We have had home made nankhatai since childhood. Nankhatai is still sold in north India, baked freshly in a clay oven. You will still be able spot them out side Seesganj Gurdwara, Old Delhi. This recipe is my mother’s recipe. When I started learning baking this was one of the first cookies that I learnt. My baking lessons started by Mom asking us to measure the ingredients and sieve the dry ingredients. In the era of measuring cups and spoons & digital weighing scales, I wonder how my mother…
