Home Made Chole or Chanaa Masala

Many friends have asked what is the secret of your Chole and I would say none. Recently a friend complained that her Chole does not come out the way mine do. We looked at the recipe, she was using. The ingredients and ratios were OK, the only difference was that I use home made Chanaa masala. So I promised her to share my home made chanaa masala recipe.

Spices to make Chanaa / Chole Masala

If the masala is ready then making chole is not very time consuming. Else, taking out all these spices in required measurements it self is very time consuming. Earlier my sister would make it for me and send it, advantages of an elder sibling who is an expert in cooking herself.

Ingredients
  • 6 cardamom Black
  • 2 inchs cinamon
  • 15 peppercorn
  • 8 clove
  • 4 bayleaf
  • 1/2 teaspoon seeds carom
  • 4 tablespoons cumin seed
  • 4 tablespoons coriander seed
  • 2 teaspoons fennel seed
  • 1 teaspoon pomegranate seed dry
  • 5 red chili

Instructions
  1. Roast all the spices in a pan and let it cool down. Once it is cooled down grind it in a dry grinder and keep it in a air tight box.
  2. Add it to chole as give in the recipe.

    I copied your ingredient but my Chaana Masala color is not at all red. Can you pls tell why? Also, in your ingredient, you have put 4 Tablespoon Coriander and 4 Tablespoon cumin seed, Is it Tablespoon or Tea Spoon?

      Hi Surbala, the cumin and coriander seeds are tablespoon. Did you roast all the spices well. Also, please use Degi or Byadagi or Degi or any other variety of Chillies that gives red colour.

    I really like this recipe! I had never used black cardamom before and it was exciting to try it! Great spice combination. It turned out pretty spicy! Thank you for sharing this recipe!
