Chocolate Peanut Butter

I got introduced to benefits of peanut butter by my nutritionist. It became part of my daily diet. one of the things that we tried together was to come up with healthy recipes and move away from packaged food.I eat a peanut butter toast or a peanut butter roll for my evening snack. Therefore thought of making the peanut butter at home. Added chocolate as a treat for the sweet cravings and also, for the health benefits of chocolate. I use coverture and not compound.

  • 2 Cups Peanuts Roasted
  • 375 grams Dark chocolate
  • pinch salt of
  • 1/2 teaspoon Almond extract ( optional)

Instructions
  1. Take peanuts and roast them , till pink on slow flame. Let it cool.
  2. Remove the skin
  3. Grind it in a mixer and in 30 seconds you will get peanut powder
  4. Continue to grind, first all the powder will come together like a dough
  5. Continue grinding and you will soon find the dough converting into shiny liquid. if you want the butter to be smooth grind further. I like it with a little crunch and therefore did not grind any further.
  6. Chop the chocolate. I used the dark chocolate, if you are making it for kids and want it to be more sweeter you can use the milk chocolate
  7. Microwave the chocolate for 30 seconds and stir. if it has not melt microwave for another 15 to 30 seconds
  8. Let the melter chocolate cool down to room temperature
  9. Add the melted chocolate, a pinch of salt and almond extract to ground peanuts and pulse till it blends well
  10. Shift the butter to airtight bottle
